In this in-depth seminar, learn how to easily prepare delicious meals made with ingredients that are fresh, packed with healing potential, and easily found in the produce section of your market. During your full day of eating and learning you will learn:

* Non-dairy substitutes for frequently used recipe items
* Recipe ideas for most meals of the day, from breakfast through dinner
* The science behind the healing properties of healthy ingredients
* Alternatives for different dietary needs, i.e. gluten-free, soy-free, etc.
* How to maximize your time in preparing your meals
* How to create a permanent and lasting change to your eating habits

Our focus for this workshop is around seasonal and warming foods, getting us ready for the cold months. We will also talk about avoiding the pitfalls of holiday eating.


The hardest part of this recipe involves the cutting of the squash into 1-2 inch pieces. Once that is done, the total preparation time is 5 minutes, with a cooking time of 60 minutes with minimal attention.

half gallon distilled water
1 medium butternut squash
3 - 5 cloves garlic
1 large onion
sea salt (to taste)
3 cloves cardamom
dill (a few dashes)
oregano (a few dashes)
cashews (a handful, if you prefer a creamy soup)
2-3 spring onion stalks (for garnish)
1/2 teaspoon olive oil per bowl (for garnish)

Step 1 : Cut butternut squash into large cubes, removing only the stem on top but leaving skin and seeds.
Step 2 : Dice up garlic and leave for a few minutes to allow the nutrients to synthesize.
Step 3 : Cut onion into large slices.
Step 4 : Place all ingredients in a large pot, making sure the water covers the ingredients with about an inch of water on top. Place large pot on stove top.
Step 5 : Bring to a boil, then add sea salt, cardamom, dill and oregano. Boil for another 15 minutes, taste the broth and add more salt, if necessary.
Step 6 : When butternut squash is completely soft, turn the fire off. Allow to cool for about 20 minutes.
Step 7 : Carefully transfer to blender, making sure to fill only half of the blender canister at a time. There should be both food and liquid for every batch you blend. Loosen the vent hole on top of the blender cover and place a kitchen cloth on top before blending to prevent really hot fluids from splashing.
Step 8 : CAREFULLY blend on smoothie setting once, making sure that the lid is held down firmly.
Step 9 : For the final batch, add the cashews before blending and mix all batches together. Use sliced green onion as garnish.

The healing behind the recipe:

The squash family is known for phytochemicals that food items that regulate digestion. The orange coloring of the squashes reveal its high carotenoid content, great for improving eyesight, among other things. Since carotenoids are fat soluble, the olive oil garnish helps us absorb these powerful phytochemicals. Lucky for us, Butternut Squash is a winter squash, when we love soup because it not only warms the body but also the soul.

HEALING PESTO (back to top)

This recipe is so easy to make, with total preparation time of 10 minutes. This pesto can easily be used as a dip and is a great way to have raw spinach. Using less garlic will improve your social life, but will be less effective on your health, especially for those who want to recover from illness.

4 cloves garlic, peeled (double if you're dealing with a virus)
3 large stalks of basil
1/2 bag of Trader Joe's Organic Baby Spinach
large handful of roasted almonds (raw is also okay)
olive oil (enough to cover the blades of the blender)
1/2 lemon
sea salt (to taste)

Step 1 : Pour olive oil into blender
Step 2 : Place all other ingredients into blender, leaving almonds for last
Step 3 : Pulse a few times until ingredients are finely chopped and combined
Step 4 : For a creamier pesto, blend ingredients in one smoothie setting
Step 5 : Be prepared to do the pesto dance!

The healing behind the recipe:

The main healing component of this recipe is garlic. Besides being a great repellant against vampires, garlic contains some very powerful chemicals that block certain viruses and mutated cells (like cancer) from proliferating in your body. These chemicals combine into a more effective medicine when you let crushed or chopped garlic sit for about 10 minutes. While cooked garlic still has some healing properties, the best way to eat garlic to boost immune function is by adding it to your foods raw.

This dish also contains olive oil, which when consumed raw, is a very healthy fat. Almonds are a good source of plant protein while spinach is a great source iron. The lemon provides the Vitamin C, that dynamic enzyme that helps the body absorb plant iron. The compounds in basil has been studied for its immune-boosting properties as well.


It is now recommended that we consume at least 2 servings of fatty fish per week. Salmon, especially the wild and sustainable kind, is a delicious option that is packed with health promoting DHA fats.

1 serving wild caught, sustainable salmon
1 cup white wine or 1 large lemon, for acid
1/2 tsp freshly ground black pepper (more if you want)
sea salt (optional)

Step 1 : Place salmon on toaster oven pan
Step 2 : Pour white wine or squeeze lemon on salmon
Step 3 : Season with pepper on both sides, then let sit for a few minutes
Step 4 : Preheat toaster oven to "roast" at 425 degrees
Step 5 : Roast salmon for 12 minutes per inch thickness
Step 6 : For best results, serve with healing pesto, substituting cilantro for spinach or basil or both.

The healing behind the recipe:

Cilantro is the best ingredient for sauces served on fish dishes because of its chelation capabilities. Heavy metals, such as mercury found in a lot of fish, are drawn out of your system to be excreted. If you're doing this, make sure you are moving your bowels regularly to get all the heavy metals out of your system.

1. Flavonoids and heart health: proceedings of the ILSI North America Flavonoids Workshop, May 31-June 1, 2005, Washington, DC.


A list of phytochemicals that have positive effects on body functions included Isoflavones for a reduction in blood pressure and increased vessel dilation, anthcyanins for increased vision, inhibition of nitric oxide production, induction of apoptosis (cancer suicide), decreased platelet aggregation, and neuroprotective effects, proanthocyanidins and flavan-3-ols for inhibition of LDL oxidation, inhibition of cellular oxygenases, inhibition of pro-inflammatory responses in arterial wall, to name a few.

2. Phytochemicals as protectors against ultraviolet radiation: versatility of effects and mechanisms.


Due to the increase in the UV radiation in the atmosphere, additional protective mechanisms against the effects of radiation has received increased interest in the world of scientific research. This paper shows that phytonutrients such as sulfides and thiols decrease the levels of LDL in the body, and lycopenes and beta-carotenes, both carotenoids, neutralize free radicals that cause cell damage.

3. Molecular basis for chemoprevention by sulforaphane: a comprehensive review.


This study highlights the cancer protective mechanisms of sulforaphane, a phytochemical found in dark green and cruciferous vegetables.
